The event, sponsored by Netflix, is in honor of the 16th anniversary of the series' premiere on television.
From 7 a.m. until noon, the pop-up "diners" will give out "Gilmore Girls"-themed cups and sleeves, while supplies last.
And just like it is for Lorelai and Rory, the java will be on the house - for the first 250 customers at each cafe.
The host coffee shops will even come complete with life-sized cutouts of Luke, and employees will don Luke's Diner gear, including special T-shirts and aprons.
The original "Gilmore Girls" series ran for seven seasons, wrapping on May 15, 2007.
Last year, Netflix announced a special reprise of the series, "Gilmore Girls: A Year in the Life."
The four-part series, consisting of 90-minute episodes, will premiere on Netflix on Friday, Nov. 25.
